Ricotta Crespelle from Near & Far
I adore this cookbook—it’s full of so many new-to-me recipes. Because the last thing I need is another vegetarian cookbook with recipes for veggie lasagna and meatless chili. Anyway! These are kind of like a cross between crepes and ricotta pancakes and they were a hit with Little Pea because she thought they were ’tillas. I served them with oven-roasted veggies (basically, I cleaned out the crisper drawer and used random things we had on hand) and melon. We had leftovers the next day with cherry preserves and I think I like them sweet even better than savory.
