Weekend Thoughts + Links

Little Pea started school this week. I always gave the side-eye to moms who referred to their toddlers going to “school,” but the program she’s in kind of falls between daycare and preschool, so neither word really feels like it fits. I work from home and as my daughter’s gotten older, squeezing in work during the day has gotten harder and harder. And when you work from home, everyone’s response upon learning that is always, “That’s so great that you get to stay home with your daughter all day!” Which, yes, it is! But something tells me these people must not hang out with a lot of toddlers if they think I’m on my laptop working 8 hours a day while Little Pea plays quietly in the next room. Just knowing that’s the assumption people make made me feel even worse about putting my daughter in school—if everyone thinks this should be easy, why isn’t it? Do I just suck?

The first day was gut-wrenching, but it was such a good feeling to get so much work done in the 4 hours she was gone and then spend the afternoon with her—really with her, not replying to emails and feeling guilty while she begged for my attention. And getting more work done during the day means that when she goes to bed, I have time for hobbies again. Like this blog! The best part is, Little Pea loves school too, so it’s truly a win-win situation, which helps lessen the mom guilt significantly. Because there’s always mom guilt, right?

This Week’s Eats

Need some tried-and-true meal ideas? I know the feeling and I’m here to help! Every Thursday, I share some of the meals we’ve eaten in the past week—only the winners, because who wants to waste time on recipe fails? Here’s what was on our menu this week:

Summer Vegetable Skillet Enchiladas
Summer Vegetable Skillet Enchiladas from Cook Nourish Bliss
Do you have any foods you irrationally hate making? For me, that would be enchiladas. Hate ’em. Don’t want to bother. So tearing up the tortillas and throwing them in a skillet is much more my speed. I used Rick Bayless’ enchilada sauce because I implicitly trust anything he does and this turned out to be a pretty amazing dinner. Little Pea loves anything made with ’tillas, as she calls them.

Grilled Eggplant Pita Pizzette
Grilled Eggplant Pita Pizzette The Sprouted Kitchen
This is an idea to save: pita pizzas. Little Pea got half of one and she ate it right up. This recipe is from the Sprouted Kitchen cookbook and it features smoked cheese, grilled eggplant, and a sprinkling of za’atar.

Pesto Zucchini Grilled Cheese with Sun-Dried Tomatoes

Before having Little Pea, my husband and I always vowed that we’d never order her food off the kids menu for her. But the reality is, sometimes the kids menu is nice—we don’t want to order an entire adult portion for her, but sometimes we want to order things at restaurants that we can’t share (oh, red wine reductions, how I miss you!).

Pesto Zucchini Grilled Cheese with Sun-Dried Tomatoes
Here’s the other reality about kids menus: there’s really not much for vegetarian kids and most of it involves lots of cheese, no veggies. Cheese pizza, mac & cheese, cheese quesadillas, grilled cheese sandwiches. These are often served with fries on the side, nothing green (or any other color, for that matter) in sight. It bums me out that this is what restaurants think kids should be served and I think this kind of turns into a self-fulfilling prophecy—we feed our kids this stuff, then that’s what they get used to eating and what they ask for, then we believe they’ll only eat cheesy cheese with more cheese and don’t bother ordering or making anything else.
